Speaking of the first category of honey, it should be known that the nectar produced by bees includes a vast category of flowers found in the plains. For this reason, smell and taste may vary. The collection, as suggested by the name, takes place in the spring and is produced until June, July. It shows itself in a light, almost golden color.

Characteristics of multifloral honey
Multifloral honey is produced from the nectar collected by bees from numerous plant species flowering in the same area. Each harvest reflects a different combination of flowers and therefore has its own distinctive characteristics.
Its colour may vary from pale yellow to amber, while its aroma may offer floral, fruity or vegetal notes. Its flavour can be delicate and light or fuller and more aromatic, depending on the season and the predominant blossoms.
Its texture may also vary: the honey may remain liquid or crystallise naturally, developing a firmer and creamier consistency. Crystallisation is a natural process and does not affect the quality of the honey.
How to use it in the kitchen
Multifloral honey is extremely versatile. It can be enjoyed on bread or in yoghurt and used to sweeten tea, herbal infusions, coffee and other drinks.
It is also suitable for preparing biscuits, tarts, creams and other desserts or for pairing with fruit, ricotta and fresh or mature cheeses. Its colour, texture and aromatic intensity may naturally vary from one harvest to another.
