Characteristics of eucalyptus honey

Eucalyptus honey is produced from the nectar collected by bees during the flowering of trees belonging to the Eucalyptus genus. When liquid, it generally has an amber colour that tends towards beige with greyish hues after crystallisation.

Its aroma is intense, warm and persistent, with distinctive notes of caramel, dried mushrooms and subtle smoky hints. Its flavour is bold and aromatic, with a characteristic liquorice note.

It generally crystallises relatively quickly, developing a firm, creamy texture with fine crystals. Crystallisation is a natural process and does not affect the quality of the honey.

How to use it in the kitchen

Thanks to its intense flavour, eucalyptus honey pairs particularly well with mature cheeses, pecorino and savoury dishes. It can be used to prepare sauces, dressings, marinades and sweet-and-sour recipes.

It is also suitable for enjoying with yoghurt, bread, dried fruit and nuts or for sweetening tea and herbal infusions, to which it adds a distinctive aromatic note. Its colour, texture and aromatic intensity may naturally vary from one harvest to another.
